Introduction to Advance Preserving Techniques with Sara Jane Brough from Ludlow Jam Pan

Join me Sara- Jane as I guide you through the skills, principles and techniques to take you’re preserving to the next level. We will cover, bottling and pasteurisation, fermentation, dehydration and how oil vinegar and alcohol can be used to transform seasonal ingredients into delicious preserves.

 

These techniques are often overlooked but are invaluable methods of preserving and have so many culinary uses. The course aim is to give you the confidence and inspiration to recreate them at home with success.

We will look at how salt, vinegar and oil come into play as wonderful preservatives. You will taste different vinegars and pair them with spices or herbs of your choice to make a fragrant vinegar.

 

We will cover dehydration techniques, you will be guided through the process of making a fruit leather and have the opportunity to taste different sweet and savoury leathers.

 

We will explore the Victorian art of bottling fruit, often overlooked with the advent of freezing and seen as to technical, however it is a brilliant way to preserve soft fruits, the process just needs unravelling and I will guide you through this.

We will also cover fermentation and pickling, these preserves take their influence from all around the world we will cover sauerkraut, kimchee and a light vegetable pickle.

 

You will take everything home you make as well as recipe handouts and the confidence to recreate what you have made on the day with ease and success.

All equipment, ingredients and materials are included and a light, 2 course lunch and refreshments throughout the day will be provided.

Workshops are relaxed, friendly, small, and suit all abilities and experience.

Please note access to the toilet facilities are up a short flight of stairs.

 

Course costs £75.00 per person

Suitable for 12years upwards, under 16s must be accompanied by an adult.
